LYE WATER

INGREDIENTS

60% water, 39,9% sodium hydroxide , 0,1% sodium chlolride.

NOTE
White substance is a normal reaction of the sodium carbonate in the water. This does not change the quality of the product. To lessen white substance , shake well.

USAGE

Add small amount on meat, rice or noodles and vegetables to soften , add flavor or keep  vegetables color. it is usually used as an additive. Do not use in high amount. Use 1/2 teaspoon  for 100g flour and 3/4 cup water to make noodle dough.

PRESERVATION

Store in a cool , dry place at maximum temperature of 32 degree celsius.
